From luxurious five-star hotels to large-scale industrial catering, Chef Niyas has honed his craft in various culinary settings, bringing a wealth of knowledge and expertise to our establishment.

Chef Niyas began his culinary career after earning a professional cooking diploma in 2004. His career began at KTDC, Mascot in Trivandrum, where he quickly became known for his dedication and skill. Chef Niyas has been honoured to serve on the culinary team for former Prime Minister Manmohan Singh, demonstrating his exceptional talent and versatility.

Chef Niyas built a solid foundation in luxury hospitality by spending two years at the KTDC Tea County Hill Resort in Munnar, followed by a year in the UAE, where he broadened his international culinary horizons. His three-year stint with the Raviz Group at Kadavu Resort cemented his reputation as an industry-leading chef. Chef Niyas’ career has taken him to some of the best kitchens, including ITC Raviz Ashtamudi in Kollam, Raviz City Hotel in Calicut, and the Cochin Marriott Hotel, where he oversaw the acclaimed Cassava restaurant. His experience in industrial catering, especially in Kazakhstan, where he served nearly 2000 meals per day for six years, demonstrates his ability to manage large-scale operations with precision and care.

Chef Niyas is a culinary expert and a well-known figure in the culinary community. He has represented his culinary expertise in The Hindu newspaper and appeared on many Malayalam television channels, where he shared his knowledge through various cooking shows. His culinary insights have also been featured on the TLC Travel Channel, a Discovery Network affiliate, where he shared the flavours of his kitchen with an international audience.

Chef Manoj

Chef Manoj is a seasoned culinary professional with over 20 years of experience in the food and hospitality industries. His journey has been marked by dedication, continuous learning, and a strong desire to create memorable dining experiences.

Chef Manoj began his culinary career with a Hotel Management Diploma from AMS Cochin in 2001. He attended training at ITC Fortune in Calicut to hone his skills and gain valuable hands-on experience in a professional kitchen. His early career included a significant stint at the prestigious Taj Malabar, where he honed his culinary skills.

Chef Manoj completed a specialised course in food production at Kozhikode’s Food Craft Institute in 2003, gaining advanced culinary knowledge. He expanded his knowledge with additional training in Hyderabad, where he collaborated with some of the industry’s best chefs.

Chef Manoj worked at KTDC Tea County in Munnar, a well-known hill resort, from 2004 to 2006, honing his skills in a high-end hospitality setting. His career eventually led him to Saudi Arabia, where he worked at Saudi Oasis from 2006 to 2011. During this time, he embraced the challenges of international cuisine and large-scale catering, expanding his culinary horizons.

Chef Manoj returned to India and joined the Raviz Group at Kadavu, where he worked from 2011 to 2013. His ability to combine traditional flavours with modern techniques made him an asset to the team and a favourite with guests.

In 2013, Chef Manoj began a new chapter as Executive Chef in Kazakhstan. From 2013 to 2022, he was in charge of the culinary operations, which included large-scale catering services that required meticulous planning and execution. His ability to manage high-pressure situations while maintaining the highest levels of quality and taste distinguishes him as an industry leader.

Chef Manoj’s culinary vision is shaped by his diverse experiences with various cultures and cuisines. His approach to food is based on a deep appreciation for ingredients, a dedication to excellence, and a drive for innovation. Chef Manoj brings the same commitment to creating intricate dishes in a luxury hotel and managing large-scale food production.

His journey from India’s kitchens to Kazakhstan’s vast catering operations demonstrates his adaptability, skill, and unwavering pursuit of culinary perfection. Chef Manoj continues to inspire with his ability to combine traditional culinary techniques with contemporary flavours, resulting in comforting and innovative dishes.
